Brownie mini-cupcakes

Mini-cup cake brownies 1.5 points each

Mix No Pudge Fudge brownie mix as directed
Fill 24 cup mini-muffin pan and bake for about 1/2 the time as the mix directs for a full pan.

Take out of oven and top each mini-muffin with one Hershey kiss.

I have tried mint brownie mix with dark choc kisses and regular mix with candy corn kisses.

Carmel Apples in crock pot


Crock Pot Caramel Apples

Ingredients

6 large Gala apples peeled, cored, and sliced or coarsely chopped
1/2 c Splenda
2 tsp cinnamon
1/2 teaspoon salt
1 sm pkg. butterscotch-flavored SF/FF pudding mix
2 TBS lemon juice
2 tsp vanilla
1/2 c boiling water





Instructions

Mix sliced apples with Splenda, cinnamon, salt and dry pudding mix until evenly
coated. Put mixture in crockpot. Pour lemon juice over apples and THEN add boiling water.

Cook on low for 7-8 hours.

Pesto

Adopted from Barefoot Contessa Back to Basics

1/4 cup pine nuts toasted
9 cloves garlic
5 cups basil packed
salt (I omitted to add later)
pepper
1 cup olive oil
1/2 cup fat free chicken broth
1 cup grated Parmesan cheese

blend in food processor first 3 ingredients. Add olive oil slowly, add chicken broth slowly, add Parmesan last 30 seconds.

You can freeze this.

Low point Chili

Weight Watcher's chili
-approx 2 points per serving
Spray pan with Pam
Saute 1 chopped onion
add:
1 can fat free chicken broth
1 can black beans; do not drain
1 can Northern beans, do not drain
1 can fat free refried beans
1 can corn; drained
1 large can of diced tomatoes
1 packet of taco seasoning

Heat until warm. Can top with low-fat sour cream, tortilla chips or low-fat cheddar cheese.

Chicken Souvlaki Sandwich


Points = 6
Servings = 4
1/4 cup fresh lemon juice
2 T low-sodium soy sauce
1 T honey
2 medium garlic cloves, minced
2 t olive oil
1 t dried oregano
1 pounds uncooked boneless chicken breasts 4 - 4 oz pieces
1/2 cup plain fat-free yogurt
1/2 cup cucumbers, shredded
1 T dill, fresh, chopped
1/2 t garlic powder
4 large whole week pita, halved
preheat over 400 (or start grill)
In shallow baking pan, whisk lemon juice, soy, honey, garlic, oil and oregano. add chicken turn to coat (I usually marinate for at least 30 minutes)
Bake chicken until cooked, turning twice and spooning sauce on. (or grill and baste while grilling)
Meanwhile, combine yogurt, cucumber, dill and garlic powder
slice chicken, stuff into pita and top with 2 T sauce. (2 halves per serving!)
I sometimes stuff with leaf lettuce, red onion and tomato too.

Speedy Southwest Salad




Thanks to Iowa City (Coralville) girl "B" for giving me this great salad recipe.
serves 6




1 package ready-to-serve salad greens


1 can whole kernel corn (drained)


1 can black beans (rinsed and drained)


1/2 cup ranch dressing


1/2 cup salsa or picante sauce

1 cup tortilla chips crushed

1/2 cup cheddar cheese shredded

1/2 cup tomatoes diced

place the greens in a large bowl. top with corn and beans. in a small bowl, combine the salad dressing and salsa, spoon over veggies. Sprinkle with chips, cheese and tomato. serve immediately. this does not keep well, so eat up.

Points approx 6. can lower points to 5 with low fat cheese and low fat dressing.

Zippy Cinnamon Rolls


Out of Midwest living




coat 15x10 pan with nonstick spray


arrange rolls from 36.5 oz frozen cinnamon rolls (w/frosting) in a pan (set frosting aside)

sprinkle one 4 oz serving of vanilla or butterscotch cook and serve pudding (not instant!)


in small bowl mix 1/2 cup melted butter, 1/2 cup brown sugar. spoon over rolls


Chill overnight.


take out in the morning and let rise 45 min


bake 350 degrees for 20 minutes or until golden.


frost.


the recipe says to invert on a platter and then frost but my invert technique did not work well so next time I will just frost on the pan and serve!

Oreo Balls

1 package Oreos - crushed
1 8 ounce package of cream cheese - softened
1 package of almond bark

Mix oreos with cream cheese. Roll into walnut size balls. Freeze for at least 1 hour. Dig in almond bark, place in refrigerator.

Easy Roast Beef


1 chuck roast (I always buy chuck because that is what my Dad told me to buy and he was a meat cutter so I figure he knew what he was talking about)

1 can of beer (or water)

1 envelope good seasoning Italian dressing mix

Put roast in crock pot, pour beer on top, add envelope of seasoning. Cook in crock pot 6 - 8 hours on low.






You can eat this traditional with potatoes added or shred for sandwiches.






For sandwiches, we like little buns, mozzarella cheese on top and grilled onions/mushrooms (just saute until carmelized in a little butter).

Potato Soup















1 stick butter (I use 1/2 butter and 1/2 margarine)

1/2 onion diced

3 - 4 stalks celery diced

5 potatoes washed peeled and diced (can rough peel)

2 cups chicken broth (or 2 cups water and 2 chicken bouillon)

3 cups milk or 1/2 and 1/2 (I use skim milk when being good)

1/4 cup flour

6 sliced bacon fried and crumbled OR 1/2 cup diced ham

salt and pepper, season as desired

Melt butter, saute onion and celery until translucent. Add potatoes and chicken broth. Let cook for about 15 minutes. Add 2 cups of the milk. Mix last cup of milk with 1/4 cup of flour with a whisk or shaker, then add to soup. Add bacon or ham. Let simmer for about 1 hour. If you need it to be thicker you can add instant potato flakes. If you need it to think add more milk.








Serve with a little shredded cheddar and diced green onions on top.
