Blueberry balsamic bbq sauce





















adapted from Cooking light - I halved the recipe



2 cups fresh blueberries


1/4 cup balsamic vinegar - the best is from the Oilerie as I have blogged about before


3 T ketchup


3 T sugar


1/2 t garlic powder


1/4 t salt


Place all ingredients in a saucepan. Bring to boil, reduce heat and simmer 15 minutest or until slightly thick. Remove from heat and cool. Place mixture in blender and process until smooth (I used a hand held blender).



Store in airtight container in fridge. serve on grilled chicken, pork or tuna. brush the meat at the end of cooking and use the rest at the table.




Waternelon cucumber salad




Soak 1/2 red onion thinly sliced in cold water, pat dry (I left out)


pat dry 4 cups watermelon (I used 1/2 of one seedless)


1 cucumber sliced and peeled


handful of mint thinly sliced




mix together, can add cashews, I used pistachios


add 1/4 cup olive oil (I used less)


juice of 1/2 lemon


salt


top with goat cheese


This is wonderful, give it a try, you will make it again and again.

This recipe came from my good Iowa City friend Jackie.









To a large pitcher add:



the base is made by layering the following:



7 oz water

the pour on top of the water

6 oz coffee

add another

3 cups of water

then pour another

6 oz coffee on top

add another

3 cups of water

Let this sit for 12 hours

strain the grounds. I did this by using a combination of a little colander and coffee filters.


To make a glass of iced coffee

Add 2 oz coffee

6 oz milk (I used skim)

sweetener

1/8 t vanilla


server over ice

Creamy Cucumber Salad



8 cucumbers, peeled, seeded and thinly sliced



1 t salt



6 radishes, thinly sliced



8 oz container plain yogurt (I use 0% fat Greek yogurt)



1/2 cup sour cream (I use low fat)



1/2 cup fresh dill, chopped and loosely packed (you can use dry if you must - about 1/8 cup)



2 T lime juice



1/4 t pepper



1 clove garlic






toss cucumbers in a bowl, sprinkle with salt and let sit for 30 min, then drain and pat out moisture with paper towel






While cucumbers sit, mix together all of the other ingredients, add cucumber and toss to coat. Cover and chill 1 hour - overnight.






Serves 10 - Points Plus about 1/2 - 1 point. adapted from get-togethers with gooseberry patch

Brownie mini-cupcakes

Mini-cup cake brownies 1.5 points each

Mix No Pudge Fudge brownie mix as directed
Fill 24 cup mini-muffin pan and bake for about 1/2 the time as the mix directs for a full pan.

Take out of oven and top each mini-muffin with one Hershey kiss.

I have tried mint brownie mix with dark choc kisses and regular mix with candy corn kisses.

Carmel Apples in crock pot


Crock Pot Caramel Apples
From Weight Watchers site

Ingredients

6 large Gala apples peeled, cored, and sliced or coarsely chopped
1/2 c Splenda
2 tsp cinnamon
1/2 teaspoon salt
1 sm pkg. butterscotch-flavored SF/FF pudding mix
2 TBS lemon juice
2 tsp vanilla
1/2 c boiling water





Instructions

Mix sliced apples with Splenda, cinnamon, salt and dry pudding mix until evenly
coated. Put mixture in crockpot. Pour lemon juice over apples and THEN add boiling water.

Cook on low for 7-8 hours.

Pesto

Adopted from Barefoot Contessa Back to Basics

1/4 cup pine nuts toasted
9 cloves garlic
5 cups basil packed
salt (I omitted to add later)
pepper
1 cup olive oil
1/2 cup fat free chicken broth
1 cup grated Parmesan cheese

blend in food processor first 3 ingredients. Add olive oil slowly, add chicken broth slowly, add Parmesan last 30 seconds.

You can freeze this.
